Method :

In a bowl, mix together rice wine
or dry sherry, brown sugar, groundnut oil, yellow bean paste, soy
sauce and fermented tofu.

Spoon sauce over pork and leave to
marinate at room temperature for 1 hour.

Meanwhile, pre-heat over to 200oC
(375oF), Gas 6.

Put pork fillet on a rack in a
roasting tin and roast for 15-20 minutes until juices run clear and
outside is richly colored.
