Chicken and Asparagus Soup Recipes

Chinese Chicken Soup

light soy sauce

dry sherry

brown sugar

rice vermicelli

piece fresh root ginger, peeled and chopped

lean cooked chicken, finely shredded salt and ground white pepper

spring onions, finely chopped to garnish

Method :
  1. Trim ends from asparagus spears and slice spears into 2.5 cm pieces.

  2. Pour stock into a large saucepan along with soy sauce and sherry.

  3. Stir in brown sugar.

  4. Bring to the boil and add asparagus and noodles.

  5. Simmer, covered for 5-6 minutes.

  6. Stir in chopped ginger and shredded chicken and season with salt and pepper.

  7. Simmer for 3-4 minutes to heat through.

  8. Garnish with chopped spring onions and serve.
