prepared sweet fruits, e.g. mango,
strawberries, lychees, star fruit, kiwi fruit
Method :
In a saucepan, place rice wine or dry
sherry, lime juice and zest, water, sugar, lemon grass, cloves,
cinnamon, vanilla, nutmeg, coriander seeds and ginger.
Heat gently, stirring until sugar
dissolves, then bring to the boil.
Reduce heat and simmer for 5 minutes.
Leave to cool, then strain into a
bowl.
Add raisins then chill.
Arrange a selection of prepared fruit in 4
individual serving dishes and spoon over syrup.
