Ingredients :

chicken pieces, skinned

corn flour

dry vermouth

soy sauce

vegetable oil

clove garlic, crushed

spring onions, sliced

medium sized carrots, diced

broccoli, in small flowerets

white stock

stalks celery, thinly sliced

mushrooms, sliced

salt

Method :
  1. Cut the chicken from the bones, slice it thinly and mix with the corn flour, vermouth and soy sauce and season with salt.

  2. Heat the oil in a large pan, add the garlic and spring onions and fry over moderate heat stirring, for 1 minute.

  3. Add the chicken, stir and fry for 3 minutes, then add the carrots and broccoli.

  4. Stir fry for a further 2 minutes.

  5. Pour on the stock, add the celery and mushrooms and cover the pan.

  6. Bring to the boil, then simmer for about 3 minutes, or until the vegetables are barely tender - they should remain crunchy.

  7. Turn into a heated serving dish and sprinkle with the walnuts.

Serving Suggestion :

Brown rice or whole meal noodles.
