Cod With Oyster Sauce Recipes

Ingredients :

piece cod fillet, skinned

shallots, shredded

oyster mushrooms, sliced

cloves garlic, finely sliced

cooked, peeled large prawns, thawed

oyster sauce

dry sherry

chopped coriander leaves

grated zest 1 lime and 1 lemon


freshly ground black pepper

Method :
  1. Preheat oven to 350oF (180oC), Gas 4.
  2. Rinse cod fillet and pat dry with absorbent kitchen paper.
  3. Place on a large piece of nonstick baking parchment and put in a roasting pan.
  4. Top cod with shallots, mushrooms, garlic and prawns then drizzle with oyster sauce and sherry.
  5. Season with salt and freshly ground pepper.
  6. Bring ends of the nonstick baking parchment over dish and pleat together to seal.
  7. Bake for 25 minutes or until cod is cooked through.
  8. Carefully lift from paper, sprinkle with lime and lemon zest and coriander and serve with rice and salad.
