Crab and Sweet Corn Soup Recipes

Ingredients :

2 spring

baby sweet corn

piece fresh root ginger, peeled and finely chopped

clove garlic, finely chopped

crab meat

rice wine

light soy sauce

Chinese Vegetable Soup

corn flour mixed with 4 teaspoon cold water

spring onions, shredded to garnish

Method :
  1. Bring a small saucepan of water to the boil, add baby sweet corn and cook for 3-4 minutes or until just softened.

  2. Drain.

  3. In a bowl, mix together ginger, garlic, crab meat, rice wine and soy sauce.

  4. Pour stock into a saucepan, bring to the boil and add sweet corn and crab mixture.

  5. Simmer for 5 minutes.

  6. Season with salt and pepper, add corn flour mixture and cook, stirring, until thickened.

  7. Garnish with spring onions and serve.

Serves 4
