Duck With Green Peppers Recipes

Ingredients :


3 tablespoons

450 g

550 ml


2 tablespoons

1 tablespoon

1 teaspoon

egg white

corn flour

boned duck breasts, cubed

groundnut (peanut) oil

green peppers, seeded and cut into 2.5 cm squares

light soy sauce

rice wine or dry sherry

brown sugar

Chinese Chicken Stock

sesame oil

white pepper

sea salt

Method :
  1. In a bowl, whisk together egg white, corn flour and 1 teaspoon salt.

  2. Stir in duck cubes to mix thoroughly.

  3. Leave for 20 minutes.

  4. In a wok, heat groundnut oil until very hot.

  5. Add duck and deep fry for about 4 minutes, until crisp.

  6. Remove and drain on absorbent kitchen paper.

  7. Add peppers to wok and deep fry for 2 minutes, then drain on absorbent kitchen paper.

  8. Pour oil from wok, leaving about 2 tablespoonful.

  9. Add soy sauce, rice wine or dry sherry, sugar, stock, sesame oil and salt and pepper to taste.

  10. Boil to the boil, then add cooked duck and peppers, reduce heat and gently heat through.

Serves 4
