Lamb In Garlic Sauce Recipes

Ingredients :

lamb tenderloin, very thinly sliced

dark soy sauce

groundnut (peanut) oil

rice wine or dry sherry

ground Szechuan pepper

sea salt

cloves garlic, chopped

spring onions, chopped

rice vinegar

sesame oil

Method :
  1. In a shallow dish, combine lamb with 1 tablespoon soy sauce, 2 tablespoons oil, rice wine or dry sherry, pepper and salt.

  2. Leave meat to marinate for 30 minutes.

  3. In a wok, heat remaining 3 tablespoons groundnut oil until smoking, then add garlic and lamb.

  4. Stir fry for 2 minutes until lamb just changes color; remove from wok.

  5. Pour oil from wok, leaving just 1 tablespoonful.

  6. Add spring onions and stir fry for 2 minutes.

  7. Add remaining 2 tablespoons soy sauce and rice vinegar.

  8. Continue stir-frying for another minute then add lamb slices and sesame oil.

  9. Stir fry for 1 minute making sure lamb and sauce are thoroughly combined.

Serves 4
