Lamb With Spring Onions Recipes

Ingredients :

egg white

corn flour

sea salt

rice wine or dry sherry

lamb fillet, cut into strips

vegetable oil

spring onions, chopped

piece fresh root ginger, peeled and finely chopped

garlic, finely chopped

brown sugar

dark soy sauce

ground white pepper

sesame oil to serve

Method :
  1. In a bowl, mix together egg white, corn flour, 1/2 teaspoon salt and rice wine or dry sherry.

  2. Stir in lamb strips to coat thoroughly.

  3. In a wok, heat oil until smoking, add lamb in small batches, keeping strips separate and stir-fry for 2 minutes.

  4. Using a slotted spoon remove lamb from wok, drain on absorbent kitchen paper and keep warm.

  5. Pour oil form wok, leaving just 1 tablespoonful.

  6. Stir in spring onions, ginger, garlic, remaining 1/2 teaspoon salt, sugar, soy sauce and pepper.

  7. Add lamb and heat through thoroughly.

  8. Serve sprinkled with sesame oil.
