Marinated Mushrooms Recipes

Ingredients :

Marinade :

3 tablespoons

dried Chinese mushrooms, soaked in hot water for 20 minutes

oyster mushrooms

button mushrooms

sunflower oil

light soy sauce

sticks celery, chopped

cloves garlic, thinly sliced

whole cinnamon stick, broken

chopped celery leaves, to garnish


light soy sauce

dry sherry

freshly ground black pepper

Method :
  1. Drain Chinese mushrooms and squeeze out excess water.

  2. Discard stems and thinly slice caps.

  3. Slice oyster and button mushrooms.

  4. Heat oil in a wok and stir fry mushrooms for 2 minutes.

  5. Add soy sauce, celery, garlic and cinnamon stick and stir fry for 2-3 minutes or until just cooked.

  6. Transfer to a shallow dish and leave to cool.

  7. To make marinade, mix together soy sauce, dry sherry and black pepper and pour over cooled mushroom mixture.

  8. Cover and chill for 1 hour.

  9. Discard cinnamon stick, garnish and serve.

Serves 4.
