Soy Roast Duckling Recipes

Ingredients :


55 ml

2 tablespoons



Dip :

1 tablespoon



3 tablespoons

2 teaspoons

2 tablespoons

duckling, giblets removed

dark soy sauce

brown sugar

cloves garlic, finely chopped

soft pancakes, spring onions and cucumber, to serve


sunflower oil

spring onions, finely chopped

clove garlic, finely chopped

dark soy sauce

brown sugar

dry sherry

Method :
  1. Rinse duckling and pat dry.

  2. Place on a wire rack in a roasting pan.

  3. Prick all over with a fork.

  4. Sprinkle duckling with soy sauce, brown sugar and garlic.

  5. Bake for 2 hours 15 minutes or until juices run clear and skin is well browned.

  6. To make dip, heat oil in a wok and stir fry spring onions and garlic for 1 minute.

  7. Combine with soy sauce, sugar and sherry in a bowl.

  8. To serve, remove all skin and fat from duckling and shred flesh away from bone.

  9. Serve with dip, soft pancakes and shredded spring onions and cucumber.

Serves 4

Soft pancakes can be bought ready made from Chinese store and supermarkets.
