vegetable oil

spring onions, sliced

cloves garlic, finely chopped

green pepper, seeded and diced

red pepper, seeded and diced

fresh hot green chilies, seeded and sliced

canned water chestnuts, diced

cakes spiced tofu

dried black winter mushrooms, soaked in hot water for 25 minutes, drained

cucumber, diced

black bean paste

red bean paste

rice wine or dry sherry

dark soy sauce

brown sugar

ground white pepper

deep fried gluten balls, if wished

sesame oil, to serve

Method :
  1. In a wok, heat vegetable oil, add spring onions and garlic, and stir fry for 3-4 minutes until just beginning to color.

  2. Add pepper, chilies and water chestnuts; stir fry for 1 minute.

  3. Stir in mushrooms, cucumber, black and red bean pastes, rice wine, soy sauce, brown sugar, white pepper, deep fried gluten balls (if using) and 2 tablespoons water and cook for 3 minutes.

  4. Sprinkle with sesame oil and serve.

Serves 4

Deep fried gluten balls are available in packets in Chinese food shops, and specialty delicatessens.
