Method :
Cut off the
chicken claws, and chop into 1 inch long. Scald with boiling water, drain
and soak in 1 tbsp of dark soy sauce for 10 minutes. Heat 3 cups of oil,
deep-fry chicken feet till golden yellow. Remove. Use 2 tbsp of oil to fry
fermented beans, chili, and spring onion until fragrant. Add the chicken
claws and stir-fry lates follow by seasoning. Place on a plate and steam
for 30 minutes. Serve.
