Pork and Glutinous Rice Dumplings Recipes

Ingredients :

1.2kg round glutinous rice

1.2kg pork (foreleg)

20 pieces of green bamboo leaves

1 bunch of straw

For Marinade :

300g soy sauce

1 tbsp cooking wine

1 tsp salt

Method :

Soak the glutinous rice for 10 hours. Remove skin from the pork, cut it into 2"x1"x1" strips, and marinate with the marinade for 1 hour. Reserve. Clean the bamboo leaves. Pile two leaves together, fold them to form a pyramid cup, fill in 2 tbsp of glutinous rice, add the marinated pork, and cover with 2 tbsp of glutinous rice. Fold up the leaves and close to make a shaped dumpling. Wrap the dumpling tightly with a weed triangle.

Put all the rice dumplings in a large pan full of water (The surface of water must cover the dumplings), cook on high heat till the water boils, lower the heat and simmer for 4 hours off the fire and leave the dumplings covered for 1 hour as to enhance the stickiness and fragrance.

Note : During the cooking, you have to add boiling water regularly as to cover the dumpling.
