Rice Rolls (Ho Fen Rolls) Recipes

Ingredients :

21 ounces ho fen

10.3 ounces fresh shelled shrimps

1 tbsp chopped pork fat

1/2 tbsp lard

2 tbsp chopped coriander

2 tbsp oil

Seasonings:

1) -

1 tbsp ginger wine

1/3 tsp salt

1/3 tsp ground pepper

1/3 tbsp cornstarch

2) -

2 tbsp seafood sauce

1 tsp salt

1/2 tbsp cornstarch

1/2 cup stock

2 tbsp chopped coriander

Method :

1. Rinse shelled shrimps. Marinate with seasoning (1) and chopped pork fat for 20 minutes.

2. Stir-fry seasoning (2) with oil. Remove when comes to a boil.

3. Spread open ho-fen. Cut into two parts. Put shrimps and pork fat mixture on top evenly. Roll it up to make two 1.5 inch wide sticks.

4. Brush lard on a plate. Put ho-fen rolls on top. Steam for 7-8 minutes over moderate to high heat. (Put ho-fen rolls in steamer after water in steamer is boiling.) Pour seasoning (2) on top. Serve.

Note - Pork and beef can be used instead of shrimps.
