Method :
Mix all the
ingredients of wrapper properly, knead into a dough that is neither soft
nor hard, let it stand for 20 minutes. Divide into 30 pieces, and roll
each of them into a round wrapper.
Rinse the
shrimps and drain, add the pork, spring onion, mushroom, salt, sugar,
pepper and sesame oil; then keep stirring till it forms a sticky paste.
This is the filling of the Shao-Mai.
Put a small
amount of filling on each wrapper then wrap to a round cylinder. Place a
piece of green pea on top, and steam over high heat for 8 minutes. Serve.
