Method :
1. Blend flour
with hot water. Knead to a dough that is neither soft nor stiff. Cover
with damp cloth for 20 minutes. Knead to a smooth, shiny dough.
2. Mix ground
pork with seasonings. Keep stirring till it becomes glue-like. This is the
filling.
3. Divide dough
into thumb-sized pieces. Roll each piece into a round wrapping, thick in
the middle, thin at the edges.
4. Put 1/2 tbsp
of filling on each wrapping. Wrap each up to make a dumpling.
5. Put a piece
of damp cloth or spread some straw on the bottom of steamer. Put dumplings
on top. Steam over high heat for 8 minutes. Serve. (Put the dumplings in
steamer after water is boiling.)
