Apricot and Raisin Stuffing Recipes

Ingredients :

40g butter

1 large onion, sliced

115g dried apricots, soaked and drained

115g seedless raisins

juice and grated rind of 1 orange

1 cooking apple, peeled, cored and chopped

115g fresh white breadcrumbs

1.5ml ground ginger

salt and freshly ground black pepper

Method :
  1. Heat the butter in a small pan and fry the onion over a moderate heat for about 3 minutes until it is translucent.
  2. Roughly chop the apricots and put them into a bowl.
  3. Add the onions, raisins, orange juice and rind, apple, breadcrumbs and ginger.
  4. Season the mixture with salt and freshly ground black pepper.
  5. Allow the stuffing to cool and use to pack the neck end of a roasting bird.

Makes about 400g
