Chestnut Stuffing Recipes

Ingredients :

40g butter

1 large onion, chopped

450g unsweetened chestnut purée

50g fresh white breadcrumbs

45ml orange juice

freshly grated nutmeg

2.5ml caster sugar

15ml chopped fresh parsley

salt and freshly ground black pepper

Method :
  1. Heat the butter in a pan and fry the onion over a moderate heat for about 3 minutes until it is translucent.
  2. Remove the onion from the heat and mix it with the chestnut purée, breadcrumbs, orange juice, freshly grated nutmeg, sugar and parsley.
  3. Season with salt and pepper.
  4. Allow to cool and use to pack the neck end of a turkey.

Makes about 400g
