Christmas Turkey Brawn Recipes
1 envelope gelatine
5 tbsp cold water
5 tbsp mayonnaise
1 carton soured cream
2 tbsp milk
1 tbsp tarragon vinegar
1/2 tsp Tabasco
3 oz onion, peeled, grated
2 tbsp chopped stuffed olives
2 tbsp chopped gherkins
1 tsp prepared English mustard
3 oz pecan nuts or walnuts, finely chopped
8 oz cold cooked turkey, cut into small
6 tbsp apple sauce
- Tip gelatine into a saucepan.
- Add water and leave 5 minutes to
soften, stand over a low heat and stir until dissolved.
- Beat melted gelatine into

Tabasco, onion, olives, gherkins and mustard.
- Cover, refrigerate until cold and
just beginning to thicken and set.
