Christmas Turkey Brawn Recipes

Ingredients :

1 envelope gelatine

5 tbsp cold water

5 tbsp mayonnaise

1 carton soured cream

2 tbsp milk

1 tbsp tarragon vinegar

1/2 tsp Tabasco

3 oz onion, peeled, grated

2 tbsp chopped stuffed olives

2 tbsp chopped gherkins

1 tsp prepared English mustard

3 oz pecan nuts or walnuts, finely chopped

8 oz cold cooked turkey, cut into small dice

6 tbsp apple sauce

cinnamon

Method :
  1. Tip gelatine into a saucepan.
  2. Add water and leave 5 minutes to soften, stand over a low heat and stir until dissolved.
  3. Beat melted gelatine into mayonnaise.
  4. Add soured cream, milk, vinegar, Tabasco, onion, olives, gherkins and mustard.
  5. Cover, refrigerate until cold and just beginning to thicken and set.
  6. Fold in 2/3 of the nuts and all the turkey.
  7. Spoon into 6 dishes and set in the refrigerator.
  8. Before serving, spoon apple sauce on top of each then sprinkle with remaining nuts and cinnamon.
