Hasselback Potatoes Recipes

Ingredients :

medium floury or all-purpose potatoes

butter, melted

dry breadcrumbs

grated Parmesan, optional

Method :
  1. Cut a slice off the base of each potato so that it will sit flat.
  2. Place the potato cut-side-down on a board and make thin, evenly spaced cuts about two-thirds of the way through each.
  3. Arrange on a lightly greased ovenproof ceramic dish and brush with butter.
  4. Sprinkle with a mixture of the dry breadcrumbs and Parmesan (if using), and roast the potatoes for 40-50 minutes, or until golden brown.
