Ingredients :

oysters, freshly shucked

vine, ripened tomato, seeded and finely diced

finely chopped red onion

finely chopped fresh coriander leaves

rice vinegar

caster sugar

Method :
  1. Clean and dry the oyster shells.
  2. Combine the tomato, onion and coriander in a small bowl.
  3. Mix the vinegar with the sugar, and stir into the salsa.
  4. Season and chill.
  5. Serve spooned over the oysters
