Pear and Watercress Soup Recipes

Ingredients :

1 bunch watercress

4 medium pears, sliced

900ml chicken stock, preferably home made

120ml double cream

juice of 1 lime

salt and freshly ground black pepper


25g butter

15ml olive oil

200g cubes stale bread

115g chopped Stilton cheese

Method :
  1. Reserve a third of the watercress leaves.
  2. Place the remainder in a pan with the pears, stock and a little seasoning.
  3. Simmer for 15-20 minutes.
  4. Place in a food processor or blender with most of the reserved watercress and blend until smooth.
  5. Transfer to a clean pan and add the cream and lime juice.
  6. Season again to taste.
  7. Reheat gently until the soup is warmed through.
  8. To make the croûtons, melt the butter and oil and fry the bread cubes until golden brown.
  9. Drain.
  10. Put the cheese on top and grill until bubbling.
  11. Serve the soup with the croutons and remaining watercress.

A new twist on a traditional combination of flavors.
