Salmon Steaks with Herb Sauce Recipes

Ingredients :

1.5 cups fish stock

1/2 cup good-quality white wine

3 tbsp chopped chives

3 tbsp chopped parsley

2 tbsp chopped basil

2 tbsp chopped taragon

1 cup cream

2 egg yolks

4 salmon steaks

2 tbsp oil

Method :

To make the herb sauce, combine the stock and wine in a saucepan and bring to the boil. Boil for 5 minutes of until the liquid has reduced by half. Transfer to a blender or food processor, add the chives, parsley, basil and tarragon and blend for 30 seconds. Return the mixture to the saucepan, then stir in the cream and bring to the boil. Reduce the heat to low and allow the sauce to simmer for 5 minutes, or until it has reduced by half. Place both of the egg yolks in a blender or food processor and blend until smooth. With the motor running, gradually drizzle in the hot herb mixture. Process until the sauce is smooth and creamy. Season to taste.

Pat the salmon steaks dry with paper towels. Heat the oil in a frying pan, add the steaks and cook them over medium heat for 3 minutes on each side, or until they are just cooked through (do not overcook). Serve the salmon hot with the herb sauce.

Note : The salmon steaks are also delicious served cold with a fresh herb mayonnaise. To make the mayonnaise, combine 125g (1/2 cup) mayonnaise, 2 tbsp of sour cream, 1 clove crushed garlic, 3-4 tsp lemon juice and 2-3 tsp each finely chopped fresh chives, lemon thyme, and parsley. Mix until smooth.
