4 anchovy fillets, drained and chopped,
reserving 1 tsp oil
2 garlic cloves, crushed
2 tbsp lemon juice
60g (2.25oz) shaved Parmesan cheese
25g 1 oz) ready made croutons
lettuce and chicken on four individual plates or in a large serving bowl.
To make the dressing, combine the mayonnaise, anchovies, anchovy oil,
garlic, lemon juice, 15g (1/2 oz) of the shaved Parmesan and some
freshly ground pepper in a food processor, and process until smooth.
Drizzle the dressing over the salad. Scatter the croutons and remaining
shaved Parmesan over the top and serve immediately.
dressing will keep in the refrigerator in an airtight container for up
to 1 week.
