Snap Pea and Broad Bean Salad Recipes

Ingredients :

500g shelled broad beans

250g snap (sugar) peas

1/2 cup olive oil

4 leeks, sliced

4 garlic cloves, crushed

1 tbsp French mustard

1 tbsp balsamic vinegar

2 tsp sambal oelek or 1 small red chili, finely chopped

Method :

Bring a pan of water to boil, add broad beans and snap peas, simmer for 2 minutes or until just tender, drain, rinse under cold water. Heat oil in small pan, add leeks and garlic, stir fry over high heat 2 minutes or until soft. Remove from heat, cool. Stir in mustard, vinegar and sambal oelek, add to broad beans and peas, stir until combined.

Note - Salad can be prepared up to 4 ours ahead. Stir well just before serving.

Serves 8
