Sweet and Sour Red Cabbage Recipes

Ingredients :

900g red cabbage

30ml olive oil

2 large onions, sliced

2 large cooking apples, peeled, cored and sliced

30ml cider vinegar

30ml soft brown sugar

225g rindless streaky bacon, optional

salt and freshly ground black pepper

Method :
  1. Preheat the oven to 180C, Gas 4.
  2. Shred the cabbage finely, discarding the hard core.
  3. Heat the oil in a large, ovenproof casserole.
  4. Cook the onions over a gentle heat for 2 minutes.
  5. Stir the cabbage, apples, vinegar, sugar and seasoning into the casserole.
  6. Cover and cook for 1 hour, or until very tender.
  7. Stir again halfway through cooking.
  8. Chop the bacon, if using and fry it gently in a pan until crisp.
  9. Stir it into the cabbage just before serving.

The cabbage can be cooked the day before and reheated for serving. It is a good accompaniment to goose, pork or strong flavored game dishes.

Cooking Tip - The cabbage can be shredded in a food processor.
