Tagine of Baby Vegetables Recipes

Ingredients :

1kg mixed vegetables (baby carrots, squash, baby corn, button mushrooms, cherry tomatoes and sugar snap peas)

4 cloves garlic

1 large knob ginger

3 tsp cinnamon

2 tbsp cumin

2 tsp chili powder

3 tbsp olive oil

20 shallots, peeled

juice and grated rind of 1 lemon

1.5 pints vegetable (or chicken) stock

1 tbsp honey

salt and freshly ground black pepper

Method :

Pound the garlic and ginger to a fine paste and mix together with the cinnamon, cumin and chili powder. Heat the oil in a saucepan. When hot, lightly sauté the shallots for about 5 minutes. Add the spice mixture and continue to cook for another minute. Add the lemon juice, lemon rind and all the vegetables (except the tomatoes and snap peas). Stir-fry for another minute. Add enough stock to cover vegetables and bring to a simmer. Add the honey and let simmer for 5 minutes or until almost cooked. Lastly, add tomatoes and snap peas. Season with salt and pepper to taste.
