Broccoli and Sweet Corn Soup Recipes

Ingredients :

1 large head broccoli

2 cups chicken stock

440g creamed sweet corn

1 stick celery, finely chopped

6 spring onions (shallots), finely sliced

1/2 tsp salt, optional

pepper to salt

garnish chopped chives

Method :

Break the broccoli into florets and cook it in stock until tender (approximately 10 minutes). Blend until smooth in food processor. Add creamed sweet corn, celery, spring onions (shallots) and seasonings. Reheat and serve, garnished with chopped chives.

Note the high proportion of complex carbohydrate in this delicious soup.

Serves 4
