Corn Chowder Recipes

Ingredients :

2 tsp margarine

1 large onion, peeled and chopped

2 medium potatoes, peeled

1 chicken stock cube

pinch mixed dried herbs or 1/2 tsp fresh mixed herbs

pepper to taste

440g corn kernels

1/2 cup water

1 1/2 cups skim or low fat milk

4 tsp cornflour (cornstarch)

Method :

Melt margarine in saucepan. Add onion and cook over low heat until translucent. Cut potatoes into small dice (about 1cm (1/2 inch) cubes) and add to onion in saucepan. Add stock cube and herbs, pepper, corn and its liquid and the water. Cover and simmer until potatoes are tender (approximately 15 minutes). Now add milk. In a small bowl, blend cornflour (cornstarch) with a little water to a smooth paste. Add to the soup. Bring to the boil, then simmer until slightly thickened, stirring from time to time. Sprinkle with parsley and serve.
