Crab and Zucchini Quiche Recipes

Ingredients :

1 quantity Wholemeal Pastry

170g can crab meat

1 zucchini, sliced

2 spring onions (shallots), chopped

1/4 cup ricotta cheese

4 eggs

1 cup skim milk

1 cup low fat natural yoghurt

pepper to taste

1/4 tsp salt, optional

Method :

Roll out pastry and line flan dish. Place crab meat, sliced zucchini and spring onions (shallots) over base of pastry. Blend all other ingredients and pour over filling. Bake 30-45 minutes or until filling is set.

Can be make it just as successfully with shrimps in place of the crab, or using fresh seafood instead of canned. Asparagus or mushrooms make a delicious substitute for the zucchini.

Serves 4 - 6
