Crunchy Rice Salad Recipes

Ingredients :

2 cups cooked brown rice

1/2 green capsicum (bell pepper), chopped

1/2 red capsicum (bell pepper), chopped

4 spring onions (shallots), sliced

4 radishes, finely sliced

1 stick celery, finely sliced

1/4 cup unsalted, roasted peanuts

1/2 cup canned water chestnuts, drained and sliced

1/2 cup green beans, lightly cooked

1 tbsp soy sauce

1 tsp sugar

2 tbsp chopped parsley

1/2 cup bean sprouts

pinch of salt, optional

spring onions (shallots), chopped radish sliced - garnish

Method :

Combine all ingredients. Chill. Serve garnished with chopped spring onions (shallots) and radish slices.

Serves 4 - 6
