Curried Tuna and Rice Casserole Recipes

Ingredients :

425g tuna canned in brine

juice of 1 lemon

120g raw brown rice

Sauce:

2 small onions, diced

3 tsp curry powder

2 tbsp wholemeal flour

3 cups skim milk

2 slices wholemeal bread, crumbed

Method :

Mix tuna and lemon juice in bowl. Cook brown rice in boiling water. Drain rice and combine with the tuna mixture. Dry fry onion and curry powder in a saucepan. Combine flour with a little milk to make a smooth paste. Add remaining milk to onions and curry powder and bring to the boil. Remove from heat and add the flour paste. Return to heat and stir continually until mixture thickens. Pour two thirds of the curry sauce over tuna and rice. Mix. Spoon into a casserole, pour the remaining sauce over the top. Cover with breadcrumbs, and bake in the oven until golden and the casserole is heated through (approximately 30 minutes).

Replace tuna with salmon if you prefer.

Serves 4 - 6
