Fettuccine Salmon Salad Recipes

Ingredients :

4 cups water

250g fresh spinach fettuccine

6 spring onions (shallots)

1/2 stick celery

1/2 capsicum (bell pepper)

1 tomato

1/2 zucchini

1/2 avocado

200g can red salmon

1 cup grated carrot

Dressing:

2 tbsp chopped mint

juice 1/2 lemon

juice 1 orange

2 tsp olive oil

2 tsp soy sauce

Method :

Heat water until boiling. Add fettuccine and cook until al dente (tender). Drain, rinse and cool. Chop spring onions (shallots), celery, capsicum (bell pepper) and tomato. Cut zucchini into fine strips. Peel avocado, discard stone, chop roughly. Drain salmon, remove bones and skin. Combine pasta with all other ingredients and mix gently. Mix dressing ingredients and pour over. Serve.

Serves 4 - 6
