Ingredients :
juice of 2 oranges
juice of 1 lemon
1 tsp margarine
1/4 tsp black pepper, coarsely ground
4 fillets fish
small quantity of plain flour
Method :
Place juices, margarine and pepper in pan. Cook until slightly reduced. Dust fish with flour. Add to sauce and poach until just cooked, turning once. Lift out onto serving plates. Spoon sauce over.
Serves 4 - 6
