Gazpacho Recipes

Ingredients :

1 small cucumber, peeled

3 spring onions (shallots)

1/2 red and 1/2 green capsicum (bell pepper)

2 sticks of celery

4 medium ripe tomatoes or a 425g can of tomatoes

1 medium white onion

1 cup tomato juice

1 tbsp coarsely ground black pepper

1-2 tsp tabasco sauce, according to taste

garnish - chopped parsley

Method :

Finely chop half the cucumber, 3 spring onions (shallots), a quarter of each red and green capsicum (bell pepper), a stick of celery and 1 tomato. Set aside. Roughly chop all remaining vegetables and place in food processor with tomato juice, pepper and tabasco sauce and blend until smooth. Add finely chopped vegetables, mix and chill well. Serve, garnished with chopped parsley.

Serves 4
