Hungarian Soup Recipes

Ingredients :

3 cups chicken stock

1 cup finely shredded red cabbage or 3/4 cup canned red cabbage, drained

3 small onions, thinly sliced

1 clove garlic, crushed

2 large tomatoes, peeled and quartered

1 large apple, peeled and chopped

coarsely ground black pepper, to taste

1/4 tsp ground all spice garnish, chives

Method :

Place stock in a large saucepan and bring to the boil. Add all other ingredients. Cover and simmer for 30 minutes. Serve, garnished with sprinkling of chopped chives.

This is a simple, filling and aromatic soup with just a hint of sweetness, ideal for cold winter nights. Eaten with wholemeal bread, it makes a warming supper. For the stock, either use good quality cubes.

Serves 4
