Indian Lamb in Spinach Sauce Recipes

Ingredients :

6 ripe tomatoes or 440g canned tomatoes

1 tbsp polyunsaturated vegetable oil

2 cloves garlic, finely chopped

2 tsp fresh ginger, finely chopped

2 fresh ginger, finely chopped

2 fresh green or red chilies, finely chopped or 1 tsp minced chili paste

salt to taste

500g lean lamb, diced

1/4 tsp each of ground cumin, coriander, cinnamon, cloves and turmeric

3 bunches fresh spinach, finely chopped, or

750g frozen spinach thawed

Method :

Blend tomatoes in a food processor. Heat oil in saucepan, add garlic, ginger, chilies and salt. Cook, stirring for 2 minutes. Add lamb, mix well, cover and cook over low heat for 30-40 minutes or until lamb is tender. Add tomatoes and cook for a further 10 minutes. Add spices and simmer gently for 10 minutes. Add spinach and simmer for a further 4 minutes.

Ideal served with Dry Curry of Potato, Eggplant and Pea.

Serves 4 - 6
