Meatloaf with Spicy Barbecue Sauce Recipes

Ingredients :

500g minced lean beef

3 slices of wholemeal bread, crumbed

1 onion, finely chopped

2 tsp Curry Powder

1 tbsp chopped parsley

1 egg

1/2 cup skim or low fat milk

Sauce :

1/2 cup water

1/2 cup tomato sauce

1/4 cup Worcestershire sauce

2 tbsp vinegar

1 tsp instant coffee

juice of 1 lemon

1 tbsp cornflour (cornstarch)

1 tbsp water

Method :

Combine minced steak, breadcrumbs, onion, curry powder, parsley and egg. Stir until mixture is well combined. Add milk and continue stirring until mixture is smooth. Shape meat mixture into a loaf and place in baking dish. Bake in preheated oven for 30 minutes, or microwave, covered, on 'medium' for 20 minutes. Remove from oven or microwave and drain off any fat. In a saucepan, combine all sauce ingredients, except the cornflour (cornstarch) and 1 tbsp of water, bring slowly to boil, reduce heat and simmer for 5 minutes. Pour sauce over meat and return to oven or microwave. Bake for a further 20-30 minutes, basting frequently with sauce, or microwave on 'medium' for a further 20 minutes. Mix cornflour (cornstarch) and water to a smooth paste. Remove meatloaf to a serving plate and slice. Add cornflour (cornstarch) mixture to the sauce in the baking dish and bring back to the boil, stirring constantly until thickened. Pour thickened sauce over the meatloaf. Serve hot with vegetables or cold with salad.

This meatloaf cooks in its own luscious dark, piquant sauce.
