Mogul Lamb Recipes

Ingredients :

6 large ripe tomatoes or

440g canned tomatoes, chopped

1/2 cup water

4 cloves garlic, finely chopped

2 tsp ginger, finely chopped

3 fresh chilies, finely chopped

1 tsp ground black pepper

1/2 tsp each of ground cardamom, cloves, fennel, cinnamon, fenugreek

4 tbsp fresh coriander leaves, chopped

1 tbsp each of fresh basil, dill and mint, chopped

salt to taste

1 x 1.5kg leg lamb, boned and trimmed of all visible fat

Method :

Place tomatoes, garlic, ginger, chilies and pepper into a saucepan and simmer, stirring occasionally for 15 minutes. Add all other ingredients but the lamb, mix well and set aside. Place lamb into a casserole dish, spread well with tomato mixture, cover and stand for 20 minutes in refrigerator to marinate. Place uncovered in oven and bake for 1 1/4 hours or until cooked. Suitable to accompany Spiced Rice with Peas.
