Mussels la Grecque Recipes

Ingredients :

2 tsp olive oil

2 medium leeks, sliced

3 large peeled tomatoes or 425g can tomatoes, chopped

1 tbsp tomato paste

1/4 tsp ground basil

1/2 tsp ground oregano ground black pepper to taste

salt to taste (not needed if you use canned tomatoes)

1 1/2kg mussels in shells, scrubbed and beards removed

Method :

Black mussels are ideal for this recipe. However, it's also excellent with clams or pipis. Green lipped mussels are also perfect for cooking this way. Heat oil in a saucepan and saut leeks until tender. Add tomatoes, tomato paste, basil, oregano, pepper and salt (if desired). Bring to the boil and add mussels. Cover and cook until shells open (this takes only a few minutes). Serve in bowls with crusty bread.
