New Potato Salad Recipes

Ingredients :

16 small new potatoes

2-3 tbsp fresh mint, chopped

2 tbsp chopped fresh chives or 2 tbsp chopped spring onion (shallots)

200g low fat natural yoghurt

1/2 tsp minced green ginger

1/2 tsp minced garlic

1/2 tsp prepared mild mustard

1 tsp lemon juice

Method :

Scrub potatoes if necessary, but do not peel. Boil, steam or microwave the potatoes until tender. Drain and cool. Place in serving bowl and add mint and chives or spring onions (shallots). In a small mixing bowl combine yoghurt, ginger, garlic, mustard and lemon juice. Mix well. Pour over potatoes. Mix well. Cover and refrigerate until ready to serve.

Serves 4 - 6
