Method :
Drop parsnips
into boiling water and cook until almost tender (about 5 minutes), or
microwave, covered with 2 tablespoons of water for 3 minutes until
almost tender. Drain, add orange rind, juice and margarine to parsnips.
Bring to boil and cook for a further 3 minutes, or microwave, covered,
on 'high' for a further 2 minutes. Lift out parsnips and keep warm.
Return saucepan to heat and simmer orange sauce to allow it to reduce
and thicken. Once sauce has thickened pour over parsnips, reheat quickly
and serve.
Carrots
cooked this way are splendid, too.
