Paella Recipes

Ingredients :

2 tsp olive oil

8 small chicken pieces (no wings), skin removed

pinch salt and black pepper

1 large onion, chopped

2 large tomatoes, chopped

1 tsp chopped, crushed or minced garlic

1/4 tsp saffron powder

2 cups uncooked, long grain brown, or basmati rice

2 cups water

1 chicken stock cube

1 small green or red capsicum (bell pepper), cut into strips

1 cup frozen peas

12 cooked king prawns, heads removed, shelled and cleaned (tails left on)

Method :

Heat oil in frying pan. Sprinkle chicken pieces lightly with black pepper and a pinch of salt (if desired). Add to frying pan and brown well on all sides. Remove from the frying pan and set aside on a plate. Add onion to pan and brown. Add tomato and garlic, cook until soft. Add saffron and rice. Stir. Pour in water and stock cube, and mix well. Spoon into casserole. Stir capsicum (bell pepper) strips, peas and chicken pieces into mixture. Cover and cook in a preheat oven until rice is cooked through and liquid absorbed (approximately 1-2 hours). Just before serving, add the prawns and allow to heat through. Serve immediately from the casserole.

This is a wonderful dinner party or luncheon dish served with a green salad and crusty wholemeal bread.
