Piquant Fish in Foil Recipes

Ingredients :

4 large fillets of fish (eg. sea perch or barracouta) or

small whole fish (eg. whiting or bream)

2 tsp finely chopped, fresh tarragon or 1/2 tsp dried

1 tbsp very finely chopped parsley - optional

coarsely ground black pepper, to taste

1 medium onion, thinly sliced

1 lemon, thinly sliced

juice of 1 lemon

2 tbsp dry white wine - optional

Method :

Use four pieces of foil large enough to completely wrap the fish fillets. Lightly grease the foil or spray it well with non-stick cooking spray. Place the fish fillet on the pieces of foil. Sprinkle each fillet with the herbs and black pepper. Arrange several onion rings on top of each fillet and top with one or two slices of lemon. Mix lemon juice and white wine and pour over the fish. Wrap each fillet in foil, sealing along the top, so that the juices are not lost during cooking or when opening the foil. Place the foil parcels, sealed side up, on a baking tray. Bake or barbecue for 30 minutes. Open foil along the sealing edge and serve immediately.

This is a wonderful way to prepare fresh fish. Serve it with jacket potatoes and a crisp salad.
