Spiced Rice with Peas Recipes

Ingredients :

1 tbsp polyunsaturated vegetable oil

1 tsp fresh ginger, finely chopped

1/2 fresh chili, finely chopped or 1/2 tsp minced chili paste

1/4 tsp black mustard seeds

1/4 tsp cumin seeds

2 curry leaves

3 cups water

1 cup basmati rice

100g frozen peas

2 tsp each of fresh coriander, mint, and basil, chopped

1/4 tsp ground saffron

salt to taste

Method :

Heat oil in pan, add ginger, chili, mustard and cumin seeds and cook, stirring, for 1 minute. Add water, bring to boil and add all other ingredients, cover and return to boil. Reduce heat and simmer for 15 minutes or until rice is tender. Suitable to accompany Mogul Lamb.
