Ingredients :
1 bunch spinach
4 mushrooms, sliced
2 spring onions (shallots), sliced
2 eggs, hardboiled
1 quantity Orange and Soy Dressing
Method :
Wash spinach thoroughly, and shake gently to remove excess water. Remove the stalks and tear into bite size pieces. Combine spinach, mushrooms, spring onions (shallots) and sliced eggs and toss in dressing. Chill before serving.
Serves 4 - 6
