Place
cabbage, onion, apple, garlic, vinegar, caraway seeds and pepper in a
saucepan or microwave proof bowl. Cook over a low heat for 5 minutes,
stirring frequently or microwave on 'high' for 3 minutes. Add the water,
bring to the boil and simmer for 10 minutes or microwave on 'high' for a
further 5 minutes. Serve by arranging the cabbage on a hot serving dish,
sprinkled with parsley.
This makes a
wonderful companion dish to rice, noodles or potato. Add a small portion
of grilled fish or meat and you have the basis for a well balanced meal.
