Vegetables en Brochette Recipes

Ingredients :

16 cherry tomatoes

16 pearl onions, peeled (or small pieces of onion)

16 button mushrooms, stalks trimmed

1 medium green capsicum (bell pepper), cut into 2 cm (3/4 in) squares

2 tbsp lemon juice

2 tsp soy sauce

Method :

Thread vegetables evenly along skewers, leaving about 2.5cm (1 in) of skewer free at each end. Mix lemon juice and soy sauce, and brush mixture over vegetables Grill for about 5 minutes on each side until vegetables are tender. During grilling, brush with lemon juice and soy sauce mixture at intervals to prevent drying. Serve hot.

When you prepare this dish, allow two tomatoes, two onions, two mushrooms and two or three pieces of green capsicum (bell pepper) per skewer. Serve it with brown rice or on a bed of cracked wheat and you have the basis of delectable meal.
