Veggie Balls Recipes

Ingredients :

2 tsp margarine

12 small white or pearl onions

12 button mushrooms (or canned champignons)

12 cherry tomatoes coarsely ground black pepper

Method :

Melt margarine in pan or wok. Add onions and toss gently for 3-4 minutes until beginning to soften. Add mushrooms and continue tossing until they darken evenly. Add tomatoes and very gently toss until they are heated through. Sprinkle with black pepper.

To vary - substitute small white or pearl onions with 2cm (3/4 in) lengths of spring onion (shallots).

Serves 4 - 6
